If you have never made kebab kofta, be sure to try it. This is one of the simplest, but truly national recipes. Classic, tasty, light - this is how this dish is prepared in the Middle East. And as a bonus, we hasten to offer you three sauce options. Depending on your preferences, at least one should suit your taste.

What you need for the dish

  • minced lamb – 1 kg;
  • red chili pepper – 1 tsp;
  • crushed cumin – 1 tsp;
  • coriander seasoning – 1 tsp;
  • paprika – 1 tsp.
  • ground black pepper – 1 tsp;
  • fresh grated garlic – 1 tbsp. l.;
  • parsley (chopped) – 0.5 cups);
  • onion – 100 gr., one medium piece;
  • salt – 1 tsp..
  • vegetable oil for frying.

This recipe also offers three options for preparing sauces. Depending on which one you choose (or prepare all three at once), you will need other ingredients. You can also serve this dish with any other sauces.

Cooking kebab kofta

Place the minced meat in a bowl and beat it a little.

Salt, pepper, add all the seasonings according to the list or to your taste. Grate the garlic and mix with the minced meat.If you want a more aromatic taste, heat the garlic for 1 minute in a frying pan in vegetable oil before adding.

Add finely chopped parsley or other herbs. Grate the onion on a coarse grater and squeeze out the juice. Only dry mass should remain. Mix all ingredients.

We form small balls of minced meat, press them down, making flat cutlets with longitudinal marks.

Fry in a small amount of vegetable oil on both sides until cooked.

Sauce No. 1, milk

2 tbsp. l. Mix store-bought mayonnaise with 1 tbsp. l. full-fat yogurt, 1 tbsp. l. ketchup and 0.5 tbsp. l. vinegar. Add a little black pepper, mix everything and beat with a whisk. Leave in the refrigerator for 10-15 minutes.

Sauce No. 2, bright

3 tbsp. l. mix yogurt with 1 tbsp. l. tahini sauce (or ground sesame seeds), 1 tsp. lemon sauce. Salt, add a little dry black pepper, cumin, 2 tbsp. l. water. Beat everything well with a whisk or blender.

Sauce No. 3, spicy

In a food processor or blender, chop half a tomato, two hot peppers, 2 tbsp. l. hot pepper and 1 tbsp. l. chili flakes. Pour in 3 tbsp. l. vinegar, 1 tbsp. l. any vegetable oil, salt everything.

Innings

Separately, fry onions, hot and bell peppers, tomatoes, cut into large pieces. In a small amount of vegetable oil, or without it, in a frying pan with thick walls, until the characteristic golden crust.

Serve the kofta kebab with fried vegetables and three sauces.
