Zucchini is not only an ingredient for preparing vegetable stews, but also desserts. They can be used to make sweet, delicious candied fruits in any fruit flavor of your choice. This is a healthy treat that can easily replace candy.

Ingredients:

  • Zucchini;
  • sugar;
  • powdered sugar;
  • fruits, berries or fruit juice.

The process of preparing candied zucchini

Slightly overripe zucchini is suitable for making candied fruits. They hold their shape better, so they won’t get soggy during cooking. The zucchini is peeled, cut into slices, and cleared of seeds. Then they need to be cut into cubes with sides 2-3 cm long.

Chopped zucchini needs to be weighed. For 1 kg of cubes add 200 g. Sahara.

The zucchini is mixed with it in a saucepan and left overnight to allow the juice to appear.

By morning, the zucchini will have decreased in volume and will practically float in its own juice. As this happens, a flavoring additive is added to them. It can be any fruit, berries or juice with a bright taste. In this case, half the serving of zucchini will be cooked with frozen cranberries, and the second with pineapple and mango juice.

If berries or fruits are added, they need to be processed into puree.

You need to pour in at least 1 cup of the additive for every kilogram of zucchini. Then they are placed on the stove and cooked.

Bring the zucchini to a boil and cook over low heat, stirring occasionally for 5 minutes. Then the cooking stops until it cools completely. You have to boil them and cook for a couple of minutes at least three times so that the syrup is completely absorbed into the pieces. Pauses between cooking can last from a couple of hours to the whole night.

During the next cooking, when the syrup has almost evaporated, you need to transfer the pieces to an electric dryer without waiting for the burning to begin. You can use the oven instead, leaving the door ajar. Drying temperature is about +70 C.

Depending on the capacity of the dryer and the amount of candied fruit, the drying process may take 10 hours or more. When the pieces stop sticking, but still remain soft, they should be collected and sprinkled with powdered sugar.

This dessert stores well, but it is unlikely to last long, as it turns out very tasty.
