Delicious sausages made from minced meat with garlic, the so-called “pivchiki”, have long won a place in the hearts of lovers of the foamy drink. This is a great appetizer or just a nice anytime snack. We offer you a recipe for making a wonderful chicken appetizer.

The following ingredients will be required:

  • chicken fillet – 1.5 kg;
  • dried garlic – 20 gr.;
  • dry dill - 10 gr.;
  • red paprika (not hot) – 20 g;
  • ground black pepper – 2 tsp;
  • water – 120 ml;
  • nitrite-salting mixture – 30 g.

You will also need a meat grinder, a large bowl, cling film and a pastry bag (or syringe). We will dry the sausages in a vegetable and fruit dehydrator or in a regular electric oven.

Making an awesome snack

Wash the chicken fillet and leave to dry on a paper towel or cotton cloth. We make minced meat by grinding the meat in a meat grinder. Add all the spices and water, mix the mixture thoroughly.

Cover with cling film and place in the refrigerator for 24 hours. To ensure that all the spices saturate the meat well, we mix the minced meat several times during this day.

Fill a pastry bag or syringe with minced meat.We form sausages with a diameter of 1 to 2 cm, directly into a bowl for drying. Try different attachments - depending on the size, you may like one or the other better. We distribute them in such a way that as many stripes fit as possible, but they should not touch each other. Depending on the diameter of the sausages, drying may take from 5 to 7 hours.

If you don’t have a dryer, you can make sausages in an electric oven at a temperature of 60-70 degrees in convection mode. If you use this option, form the sausages directly onto a baking sheet on parchment paper. But you will have to turn them over after a while. And, unfortunately, electricity costs will be much higher.

From 1.5 kilograms of fresh meat you will get about 700 grams of sausages. The weight loss will be significant, but with this method, a homemade snack will still be cheaper than a store-bought one. And if you want to make the sausages spicier, experiment with the amount of garlic, add ground red or cayenne pepper, and hot paprika. And if you like saltier options, also add more salt or curing mixture. An amazing snack is ready, enjoy!
