Many people love homemade ice cream. But not everyone cooks it. It seems like a lot of work and you have to find good heavy cream. But you can make ice cream very simply, from regular milk, eggs and sugar. Be sure to try this ice cream recipe and you will make it often.
We will need:
- milk – 900 ml;
- chicken eggs – 6 pcs.;
- granulated sugar – 300 gr.;
- vanilla extract.
Milk ice cream recipe without cream
We heat the milk, making sure that it does not “run away” from the stove. Stir constantly.
Separate the yolks from the whites.
Add a tablespoon of sugar to the yolks and start whisking.
Gradually pour in 100 ml. warm milk, add 2-3 drops of vanilla extract for flavor.
Carefully add the yolk mixture into the remaining milk, whisking constantly.
Place on the lowest heat and continue whisking until thickened. Under no circumstances should we boil the mixture. It is very important not to overcook it, so cook for about 6-8 minutes, stirring and whisking.
Next, let the mixture cool completely.
Add 250 g to the whites. Sahara.
Place in a water bath and heat for 7-10 minutes, stirring constantly.
Cool and beat until thick foam. Mix two types of mixture - yolk-milk and protein.
Transfer to suitable containers and place in the freezer.
Beat with a whisk or mixer until smooth.
After 3-4 hours, homemade ice cream is ready. It is better to take it out with a spoon dipped in warm water. Or you can immediately put it into small molds and serve in portions.
