Today we are going to make jerky hot turkey strips. You can use virtually any meat. Beef will be much denser, and pork will be noticeably fattier, it's up to you to decide.
It is convenient to work with frozen raw materials, this makes it easier to cut into identical plates and then into bars. We try to keep the size the same. This will play an important role at the baking stage, so all our straws will be evenly dried.
We marinate our meat. This is really a flight of fancy here. If you want to make it very spicy, feel free to add more hot pepper. If you like more sweetness or, on the contrary, acidity, add your favorite sauce. The following ingredients were used in this recipe: soy sauce (instead of salt), hot smoked paprika, ground black pepper, adjika.
Give it some time to marinate.You can leave it on all night, or just a few hours.
Then comes the most important and longest stage - drying. To do this, we use a simple oven. In any oven, in addition to baking sheets, there is a wire rack. Use toothpicks or skewers. Thread each block onto a skewer and hang it on the wire rack. Don't forget to place a baking sheet underneath; marinade or juice may drip.
Bake with the oven door slightly open for about four to six hours at a temperature of sixty degrees Celsius. If the oven has a convection mode, be sure to turn it on too.
