According to this recipe, lard or undercuts (lard with meat streaks from the abdominal part) turns out excellent - soft, tender, simply delicious! The thing is that in ordinary salted lard you will not find anything other than salt in the recipe, but in pickled lard there is additionally vinegar and onions, which significantly improves its taste. Add here a whole set of appropriate piquant spices with red chili pepper - the ideal pickled lard for your borscht and for sandwiches is guaranteed!

Ingredients:

  • - lard (undercuts) – 0.5 kg;
  • - salt – 0.5 cups;
  • - vinegar 9% - 2-3 tbsp;
  • - water – 0.5 l;
  • - onion – 1 pc.;
  • - spices: ground red pepper, chili pepper flakes or ready-made mixture for salting lard - to taste.

Preparation time: 2-3 days.

Recipe:

1. Clean the lard or undercuts with a knife and wipe well with paper towels, removing any possible dirt, then cut the piece into squares or rectangles. They should be of such a size that they can be compactly placed in a marinating container - plastic or stainless steel, or in a glass bottle.

2. Cut the onions into medium rings and distribute them among the pieces of lard.

3.Sprinkle a generous layer of salt on top and between the pieces.

4. Pour lard and onions with warm water and add vinegar.

5. Cover the pieces with a saucer so that they are completely immersed in the marinade - this is important, watch this carefully. Leave the lard to salt for 2-3 days in the refrigerator.

6. After the marinating process, the liquid can be drained, leaving the onions as desired (for example, used for salads), and the pieces of finished pickled lard blotted from excess moisture. Before breading lard in spices, it should be as dry as possible.

7. Mix the selected spices on one wide dish with sides, roll each piece of lard on all sides, pressing it firmly to the spices, trying to “stick” them to the sticky surface in one layer. It is better to shake off the excess and use it for the next piece.

8. When everything is ready, put the pickled lard in the freezer or refrigerator for storage.

Frozen pickled lard is very easy to cut into the thinnest pieces and, for your great pleasure, treat yourself to this wonderful appetizer with mustard, cucumbers, herbs...
