Few people will refuse a delicious barbecue. And many people love, according to Russian tradition, fried meat served with pickled onions. But how to make such perfect onions, which are served in professional kebab shops? Tasty, crispy, slightly sour, with a specific aftertaste, aromatic smell and taste of greenery? We offer you a simple, accessible recipe in which the dish will not leave anyone indifferent.

Ingredients

For preparation you will need:

  • bulb onions;
  • fresh greens – dill;
  • water – 800 ml. (add seasonings based on this volume);
  • sugar – 2 tbsp. l.;
  • salt – 0.5 tsp;
  • vinegar 9% – 5 tbsp. l.;
  • black pepper (ready seasoning or freshly ground) - to taste.

Preparing delicious pickled onions for meat

Cut regular onions into thin rings. You can use red onion, but keep in mind that the taste will be a little sweeter.

Place in a saucepan or bowl. Separate the dill from the stems and chop finely. Mix vegetables and herbs.

We make the brine. Pour cold water into a saucepan or bowl. Add sugar, salt, vinegar. If you like a more sour taste, you can add a little more vinegar.

Add either ground black pepper or chopped freshly ground pepper. Mix everything well until the salt and sugar dissolve. Pour into onion and dill. Mix again.

Leave the vegetables and herbs to marinate for 30-40 minutes. You can install oppression or cover with cling film. It is better to marinate in a cool place or refrigerator.

In half an hour, delicious onions are ready, just like in professional kebab shops.

Strain through a colander or remove the onion with two forks, draining the liquid. Place on a plate and serve separately or as an addition to barbecue and other meat dishes. It turns out very tasty, you don’t feel the bitterness at all, the onions are crispy and juicy. By the way, be sure to add dill, as it adds some kind of piquant taste, a certain sourness and a little sweetness. Bon appetit!
