The average price of 1 kg of seasonal apples ranges from 50 to 100 rubles. For this price you can buy 8 medium-sized fruits. It is not difficult to calculate that 80 apples will cost 1000 rubles. Also for production you will need a special caramel, the cost of which is 250 rubles. and 2.5 kg of sugar for the amount of 75 rubles. The cost of packaging and electricity will be a total of 150 rubles.

Now you can carry out simple calculations:

  • granulated sugar 2.3 kg;
  • water 470 ml;
  • packaging bags 80 pcs.;
  • stick 80 pcs.;
  • breading mixture as desired.

Green fruits are best suited for making caramel apples. They usually have a fairly dense structure and look beautiful when finished.

The apples need to be washed well, the stem removed and wiped thoroughly. Then you need to insert a stick holder into each fruit. The sharp end of the stick is stuck in the area of ​​the stalk. For these purposes, wooden or plastic sticks are used. Usually, in stores that sell icing, you can easily purchase both sticks and packaging. Many companies offer a special device for stringing an apple onto a stick, but as practice shows, you can do it without extra costs.

Now you need to start making caramel. Mix all the necessary ingredients according to the instructions written on the lid of the jar with icing. Pour the resulting mixture into a pan with a flat bottom and place over moderate heat. Caramel is considered ready when the temperature of the solution reaches 138 degrees and quickly hardens in the form of a drop on a plate. It is very important that the caramel does not burn. Otherwise, the glaze will become bitter and inedible.

Once the glaze reaches the ideal degree of readiness, you can begin making the product. Hold the apple by the stick and quickly dip it into the caramel. It is recommended not to cover the area around the stick with caramel, as this area will release excess air bubbles that may form during the process of covering the apple with glaze. Then the apple can be placed on a tray greased with vegetable oil to completely harden. If the glaze is cooked correctly, the caramel shell will harden within a minute. To apply additional decor in the form of breading beads, coconut and chocolate chips, then this must be done immediately after dipping the apple in caramel, otherwise the breading will not stick.

Packaging and storage

Properly cooked apples are well packed in transparent bags. Undercooked frosting will stick to the plastic and may melt quickly.

Ready apples are best stored in the refrigerator. When transporting the product, use a cooler bag or cover the product with cooling elements. The shelf life of prepared apples is 3 days. When making a batch of goods, this fact must be taken into account so as not to throw away goods that were not sold on time.
