Products:
- egg whites – 3 pcs.,
- sugar – 150 g,
- citric acid - on the tip of a knife,
- gel dyes.
Meringue preparation sequence:
1. Meringues are tinted with gel food coloring. If you don’t stock up on such paints, you can bake single-color meringues. After being in the oven, the white meringues become creamy and look nice against the backdrop of colorful Christmas balls.
2. It’s convenient to beat chilled whites, so keep the eggs in the refrigerator until you start working on the dessert. The whites are separated from the yolks in any convenient way; this can be done at the time of breaking the eggs. Second option: carefully break the eggs and lower them into a bowl, and then use a tablespoon to lift and pick up all the yolks one by one.
3. There should not be a single drop of yolk in the prepared whites.
4.Whip the whites with a blender for 3 minutes until a thick, stable foam appears.
5. Add citric acid and half the specified amount of sugar. Beat for 5 minutes, add all the remaining sugar, beat for another 5 minutes.
6. The finished protein mass should be dense, all grains of sugar will dissolve completely.
7. Open a disposable triangular culinary bag, draw 3 stripes on the inner surface of the bag with blue gel dye. Fill the bag with whipped egg whites.
8. Place baking paper on a baking sheet, squeeze the protein mass out of the bags, forming spiral circles. You can form the meringues on a baking board lined with paper, and then carefully transfer the paper sheet to a baking sheet. A skewer is inserted into each meringue, moving the stick to the very top, the sharp tip should remain at the bottom.
9. Take a new bag and draw 3 stripes of yellow gel dye inside. Fill the bag with proteins and squeeze out the mass. When all the whites are on the baking sheet, turn on the oven at 130 degrees. Meringues on skewers are baked for 2-3 hours. The meringues can be taken out when they completely lose their stickiness: they become dry and light.
10. It’s easy to make a New Year’s composition using meringues on skewers. Cut a rectangular piece of polystyrene foam and stick skewers into it.
11. Thread small plastic balls onto skewers. The foam base is masked with fluffy “rain.”
12. In a dry room, meringues do not spoil for a long time. The room can be decorated with a sweet composition a week before the holiday.
