Lovers of savory snacks will definitely enjoy this wonderful, tasty eggplant preparation for the winter. The recipe for preserved eggplant “Like Mushrooms” is very simple and can be prepared without sterilization.

Products:

  • - eggplants - 0.5 kg;
  • - water - 420 ml;
  • - garlic - 2-3 cloves;
  • - laurel leaf - 2 pcs.;
  • - allspice - 5 pcs.;
  • - vinegar 9% - 25 ml;
  • - salt - 0.5 tsp.

Step-by-step cooking recipe

We prepare the necessary products for preserving eggplants “Like mushrooms”.

After washing the eggplants, cut off the stems of the fruits. Cut the medium-sized fruits into 4 parts, and then cut each part into bars. Fill the eggplant pieces with 1 tbsp. l. salt, leave in salt for 30 minutes. After the time has passed, wash the eggplants under running water, washing off the salt, and along with the salt, the bitterness.

Having poured the water according to the recipe into the cooking vessel, put it on the fire. Add 0.5 tsp. salt, pepper, bay leaves and vinegar according to the recipe.

After bringing the marinade to a boil, pour the chopped eggplant slices into the pan. Boil the eggplants in the marinade for 10 minutes.

We wash the containers for preservation with warm water and soda, rinse well and sterilize.We place eggplant pieces in jars in layers, between which we place garlic, cut into small pieces.

Pour hot marinade over eggplants in jars.

Pour the marinade into the bowl with the winter eggplant preparation up to the neck.

We seal the preserves tightly with a key and turn the jars over onto their lids. We wrap it in a blanket for 12 hours. Then we remove the eggplant preparation to a cool place.

In winter, we transfer the eggplant “mushrooms” from a jar to a plate, season with sunflower oil and add onions to them.

Take note of this simple recipe for a savory snack, which is perfect not only for a home dinner, but also for a holiday table with strong drinks.

Result:

  • Time: 15 min + 30 min preparation.
  • Yield: 450 ml jar.
