Mackerel is the most delicious of the inexpensive and affordable fish for the everyday table. It is baked in foil, grilled, salted, and smoked. And everything turns out tasty and appetizing. Now we will not prepare the most complicated recipe, but nevertheless, the fish turns out to be unusual and very tasty.

Ingredients


And very few ingredients are required (for two large servings):
  • - mackerel - 2 pcs.,
  • - dry ground paprika - 1.5 tsp,
  • - garlic - 3 cloves
  • - mixture of peppers - 1 tsp,
  • - olive oil - 4 tbsp. l.,
  • - salt - a pinch.

For the sauce:
  • - mustard with grains - 1 tbsp. l.,
  • - saffron - a few threads,
  • - ground black pepper - 0.5 tsp,
  • - lemon juice - 1 tbsp. l.,
  • - extra virgin olive oil - 5 tbsp. l.

Cooking a healthy fish dish


First you need to buy fish. The most important thing here is to choose silver-colored fish without external defects with intact ice glaze. It must be defrosted on the bottom shelf of the refrigerator. It will take a long time to defrost, at least ten hours.

When the mackerel has defrosted, cut it into fillets.Moving the knife under the front fins, we cut off the head with the fins. We open the belly and clean out the insides. We rinse, simultaneously getting rid of blood clots under the ridge and black films along the walls of the abdomen. We lay the carcass on its side. We take a thin, sharp knife and parallel to the table, cut the back along the ridge, but shallowly - up to the ribs. Remove the fillet, making sure that the ribs remain on the backbone. Turn over and repeat the procedure. We select the rib bones if they remain on the abdomen. We trim the edge from the abdomen. We do not remove the skin. The fillet is ready.
Prepare the marinade. Pour paprika, pepper, a pinch of salt and garlic into a mortar. We crush everything into pulp. Add olive oil. Mix thoroughly. Place the fillet on a plate, skin side down. Lubricate generously with marinade, cover with film and place in the refrigerator for several hours, or better yet, overnight. Preheat the oven to 180 degrees. Cover a baking sheet with foil and place the marinated fillets, skin side down. Decorate the top with large crystals of kosher salt (this is nice, but not necessary) and put it in the oven.

Mix all the ingredients for the sauce in a bowl. During this time, the fillet should be cooked. The main thing is not to overcook it in the oven, because it will become dry and fall apart. The time needed is about 5 minutes, or you can check it visually: when the skin begins to shrink and the fillet bends like wings, you can remove it from the oven. Place on a plate. Pour sauce on top. If desired, potato salad or even just mashed potatoes are perfect as a side dish.
By the way, mackerel is also called mackerel.
