You can store prepared vegetables in the freezer for main courses, stews, soups, side dishes, and baked goods. Freezing preserves all the beneficial properties of products. I offer several ways to prepare zucchini for the winter.

Zucchini and zucchini are great for both cooking and freezing. You can make preparations by combining them with other vegetables, such as carrots and bell peppers.

The following can be used as storage containers:

  • zip bags and regular cellophane bags;
  • disposable food containers;
  • reusable food containers.

When choosing zucchini, you need to pay attention to the maturity of the fruit and the absence of visible damage and stains. The skin should be soft and evenly colored.

How to prepare zucchini

Before freezing, you need to prepare the zucchini as follows:

Rinse and dry with paper towel.

Cut off the stem. Chop or grate. For small young zucchini, you can leave the skin, but if the fruit is not young, then it is better to peel it.

You can preserve the pleasant taste of zucchini, which does not change after defrosting, by blanching. Blanch the zucchini by placing it in a pan of boiling water for 2 minutes, then remove it and cool.

Methods for cutting zucchini for storage

The most popular methods of freezing are in cubes or sticks, circles, grated and pureed. The choice depends on how the product will be used.

Freezing zucchini cubes

The most convenient way to freeze vegetables is in the form of cubes. In this form, zucchini is suitable for preparing main dishes. You can freeze it by stewing, baking, making puree soup or stew. You need to cut into small cubes of approximately the same size.

Zucchini in circles

If you plan to use the zucchini for casseroles or frying in a pan, you need to cut the zucchini into circles.

Grated zucchini

To preserve zucchini for later preparation of pancakes, you need to consider the following steps: Rinse and dry the zucchini;

Grate on a coarse or medium grater.

Place in a colander, squeeze out the liquid with your hands and let it drain.

Place in containers or pack in a bag.

To ensure that use does not cause problems, you need to freeze it in portions, placing in a container the amount that will be used at a time.

Zucchini puree

Grinding zucchini into puree may be required for baby food. The most convenient container for freezing puree is a food container.

When freezing zucchini, it is worth keeping in mind that you can freeze it only once, otherwise its taste and appearance will deteriorate.
