To prevent meat grinder knives from becoming dull

An incredibly simple tip, thanks to which your meat grinder will serve for a very long time without sharpening the knives. It is enough to follow the simplest rule when reassembling the meat grinder, which will save the cutting edges of the knives from becoming dull.

To prevent meat grinder knives from becoming dull for a long time

Let's start with the fact that the new meat grinder knives have a perfectly flat surface and fit together in the best way. During the period of grinding meat, there is a minimum gap between the knives, through which the product does not fall and the meat is cut with sharp edges with minimal effort.

When the product is twisted, you disassemble and wash the parts of the meat grinder as usual.

And now you should pay attention that even after one time, wear appears on the mesh knife. Here's the outside:

And here is the inner one, which was in contact with the cross-shaped knife. And traces of friction and wear are clearly visible on it.

The main advice is this: the mesh knife should not be turned over during its entire operation until re-sharpening.
That is, after washing, you must put the mesh knife back, also with the wiped side facing the cross-shaped knife. It is important!
The fact is that during the work process, wear appears on both knives, not uniformly, but on both surfaces of the knives. As a result, the knives are well ground to each other, despite the unevenness between their planes.
And if you suddenly accidentally turn the mesh over with the new side facing the cross-knife, then their surfaces will no longer touch as much as they should, due to the fact that the cross-shaped knife has a wave-like groove, the pattern of which corresponds only to the worked-out side of the mesh-knife.
As a result, meat will begin to get into this gap, as a result of which it will not be cut, but will tear, which will lead to dulling of the knives.
Here is a simple tip that will save your knives and extend their working time until the next sharpening.

The so-called “fitting in the best way” is the parallel mating of the working surfaces (cutting planes)...! Actually, the problem is not worth a damn.....there are several ways to return the surfaces to working condition....wash off simple sandpaper 400-1000 (depending on the degree of workmanship), and on the glass there are circular rotations of the mesh on it, and if the hands are glued correctly and there is no hangover syndrome.....then the problem will fall off instantly...... ..

It’s better to do this on a new abrasive stone, and don’t forget about the moving knife

On sandpaper, the edges of the holes will collapse, which means it’s defective. High-quality sharpening is only possible on a grinding machine. And paper only in a desperate situation.

Why didn't you like sandpaper? Have you ever used a grinder?

Well, what kind of paper? You can’t find a grinder at home, but the quality of sharpening on paper is not quality. Diamond paste with machine oil and grind using movements in the form of a figure eight on a polished cast iron plate (for example, from an old iron) and a mesh and knife.

Knives and mesh should be made of normal steel, and not dull on the first piece of meat. That's the whole problem. This is how we do it, just finish it with a file.

Most often, it is not the dullness of the knife, but the degree to which the knife is pressed against the mesh. I use rings between the knife and the screw drum of the meat grinder. The load on the mover may increase, but the cutting will be of better quality

The best way is to wipe the mesh and knife with vegetable oil before use.
