      I wrote my comment there. "Nulevka" + glass. I worked as a butcher and always used knives in a professional meat grinder. And on the day of minced meat, a lot was made for the market. The knives have never spoiled.

      Good advice.But is delicate processing really that important? I think this is an exaggeration. The second (light) side of the block has a grit of 200, it seems that with a few light movements you can achieve the musat effect, i.e. minimal metal removal.
