Vegetable caviar and pizza preparation
I make two options - vegetable caviar and pizza preparation. They are prepared according to the same principle.
We collect everything that is in the refrigerator. I still have a few rotten eggplants, zucchini, rotten peppers, tomatoes and a really scary cucumber.
We cut off all spoiled parts of vegetables. It is better to remove the skin from cucumber and zucchini.
Cut everything into very small cubes. First, eggplants and zucchini.
Next are peppers and cucumbers.
Simmer in a frying pan or saucepan with thick sides, in a small amount of vegetable oil, for 7-10 minutes.
At the end, add tomatoes or a couple of tablespoons of tomato paste and simmer for a couple more minutes. Don't forget to add salt.
This is the mass you should get.
I use it as a side dish dressing. And if you grind it in a food processor or using a blender, you get delicious vegetable caviar. It can be rolled into jars by adding 0.5 tsp.vinegar per 1 liter of vegetable mixture.
These vegetables are also very tasty if you add them instead of tomatoes to homemade pizza. You can use either freshly prepared or canned mixture.
