It is necessary to freeze 1 liter of kefir directly in a bottle or bag.
When it freezes, you need to cut off the packaging and transfer it to a colander lined with gauze.
Gradually it will melt and the serum will escape from it.
The dry mass remaining in the gauze is further squeezed out and transferred to a deep plate.
Add chopped dill, garlic, salt and smoked red pepper to taste.
