Very old spatulas are made of thicker sheet metal than modern ones. If you have such a tool lying around, then it can be converted into a Japanese craft knife - “kiridashi”. This is a traditional Japanese craft knife with a small blade, which is convenient for cutting leather, sheet plastic, and trimming edges during production. furniture etc.

Kiridashi cutter manufacturing process
The standard spatula handle can easily be used as a kiridashi handle, so if it is still intact, it should be carefully knocked out of the shank. A penetrating lubricant like WD-40 will help with this.
Then a template of a traditional Kiridashi knife blade is cut out of paper. It is applied to a spatula and outlined.
The blade is cut with a grinder, after which you need to align its edges so that they go at right angles to the side surfaces. This is done with metal files, and where there are smooth edges, then with sandpaper.
Then you need to remove the blade trigger and do a one-sided sharpening. The blade itself should be very smooth, which will eliminate increased friction during deep cuts.
Next, you need to make a new or modify the standard spatula handle. It is made straight, but not cylindrical, with the sidewalls ground into a plane. The handle is soaked in oil and pressed onto the tang of the blade.
